Ah fresh peaches, makes your mouth water just thinking of biting into a fresh ripe peach and having the juice drip down your chin. Lancaster County Pa is full of orchards with Peach and Apple trees in abundance. Cling peach season is just finishing up and the first freestone peaches are on the stands waiting for you to pick them up.
Here are two recipes to enjoy those wonderful peaches!
Peaches n' Cream
1 large ripe fresh peach, peeled, cut in half and pitted
1/2 tablespoon butter
2 teaspoons heavy cream
2 teaspoons white Zinfandel or other fruity white wine
1/2 teaspoon vanilla extract
1 tablespoon packed brown sugar
Pinch of cinnamon
Whipped cream for serving
Preheat oven to 350 degrees. Clean peach cavity with a fruit baller. Put peach halves in a small baking dish. Put butter in cavity in each peach half. Add cream. Sprinkle wine over peach, letting some accumulate in bottom of dish. Sprinkle vanilla and brown sugar over peach. Sprinkle lightly with cinnamon. Bake for 20 - 30 minutes, until tender and bubbly. Serve with a dollop of whipped cream. Enjoy!
Peaches Melba
1 large fresh sliced peach
1 tablespoon sugar
Almond Extract
Vanilla yogurt
Raspberry jam
Sugar sliced peaches and add a dash of almond extract. Refrigerate for 15 minutes. Put a spoon full of vanilla yogurt in a serving dish. Add peaches and drizzle with thinned raspberry jam. Enjoy!
